Asian Sesame-Ginger
Whisk together soy sauce, rice vinegar, a small amount of sesame oil, ginger (fresh or paste), a squeeze of honey or agave, and a neutral oil like avocado or vegetable oil. Add a dash of sriracha or chili crunch for heat.
Ratio: lean heavier on oil and vinegar, lighter on soy so it doesn't overpower.
Italian Herb
Whisk together olive oil and vinegar, a pinch of oregano, chili flakes, garlic (minced or powder), salt, pepper, and a small squeeze of honey to balance. If you have sun-dried tomatoes or olives on hand, finely chop a few in — they add a lot of depth.
Ratio: 3:1 olive oil to vinegar.
Citrus Vinaigrette
Whisk together fresh lemon or orange juice, olive oil, a small amount of honey or agave to balance the acid, salt, pepper, and a bit of minced shallot if you have it. Optional: a pinch of cumin gives it a warm note that works well on grain bowls and roasted veggie salads.
Ratio: roughly 2:1 oil to citrus.
